Matcha Mint Coconut Chunk Ice Cream

It's official. My hips have met their match. And it's complex and decadent and really... green. SO GREEN.

Matcha and mint are a marriage made in heaven.


But as is true with most things, I didn't stop there. When have I EVER just stopped there? Nope, we went for it. A minty mouthful of coconut milk ice cream packed with the punch that only matcha can give and riddled with dark chocolate chunks. 


I'm always amazed at the way ice cream comes together. It's a little cream and a little sugar and then something magical happens. Here the magic really involved mint and matcha. But who's complaining? Not me. My mouth is full.

Matcha Mint Coconut Chunk Ice Cream

1 can coconut cream

1/4 cup agave syrup

2 Tbsp. matcha powder

2 tsp. peppermint extract

1/2 cup chopped dark choclate

Mix all the ingredients except the dark chocolate in a blender. Pour into container and chill until cold, about 4 hours. Add to ice cream maker and churn according to manufacturer's directions. About 5 minutes before completion, add chocolate chunks. Freeze until firm another 4 hours.
