Mocha Peppermint Patties

When I go to the theater, I always scout out my top priority at the snack bar. Do they have frozen junior mints? The quality of a theater is directly related to the answer to this question. No frozen junior mints?! Heathens.

I found out a few years ago I could make my own peppermint patties at home and it changed my life. But this year I wondered if I could combine two of my favorites- peppermint and coffee. Yes, I know Charbucks does it.

What if you were to take all the taste of a Peppermint Mocha and cram it into one bite?

The answer is that it would be this candy.

And they are remarkably simple to make. Just a handful of ingredients gains you a crumbly mixture that is easily rolled, then shaped into patties.

From there they go for a little dip, then get sprinkled with crushed peppermint candies, otherwise known as starlight mints.These patties might need some time in the freezer to fully set, but when they do you can pop them into a jar and amaze friends and family. Once you have a homemade peppermint patty, I'm pretty sure you're never going back.

Mocha Peppermint Patties

3-4 tablespoons milk or cream
1 tablespoon coconut oil melted
1 tablespoon light corn syrup
2 teaspoon peppermint extract
1/2 teaspoon vanilla

2 Tbsp. finely ground coffee
3 3/4 cups powdered sugar
12 oz. dark chocolate

12 oz. semi-sweet chocolate
Crushed peppermint candies for garnish

Mix mix or cream, coconut oil, corn syrup, peppermint extract, ground coffee, and vanilla. Add in powdered sugar one cup at a time.
Add 1-2 additional tablespoons of milk or cream, if the dough is too crumbly.
Form the dough into a ball and roll out into a circle about 1/4 inch thick on a silicone mat.
Use a small circle cookie cutter (I used a 1-inch size) to cut out peppermint patties.
Return to the freezer for about 10 minutes.
Melt chocolate in the microwave or in a double boiler on the stovetop.
Working in batches, remove several peppermint patties at a time from the freezer coat them in chocolate.
Place on a silicone mat and sprinkle with crushed peppermint candies.
Continue with the remaining peppermint patties. Store in refrigerator.
