Pear and Pistachio Parfaits

I'm done with snow and subzero everything. Solidly over it. This always happens after the cozy, seasonal warmth of Christmas, when I rouse myself from the sugar stupor of the holidays and realize two whole months stretch in front of me like a piece of god damn frozen tundra.

And so many pieces of clothing to put on. SO many.

I'm pretty sure the worst part of my day is getting dressed to go out and face all that messy, gray expanse of sprawling humanity.

It also doesn't help that everything I own is a bit snug right now. The holidays are so kind that way. They always leave a few reminders of the good times we've had, usually in the saddlebags that hover on my thighs. Just in case I need to remember why eating a dozen cookies in one sitting is NOT the best idea I've ever had. Cue New Year's resolutions.

You know what is the best idea I've ever had? These parfaits. Because healthy never tasted so good. A little Greek yogurt. fresh pears, a smattering of my Fig & Honey Almond Granola (get the recipe here), and chopped pistachios are the perfect combination for these cups of parfait.

You get the best of both worlds- tart and sweet, crunchy and creamy, dished out as a delicious breakfast that you don't have to waste an ounce of guilt on.

The perfect parfait begins with a generous dollop of yogurt. I prefer mine tart to compliment the rest of the cup o' amazing we're concocting, but you do you. Next up, pears.

Let's have a word about pears. I adore pears, but I prefer mine crisp, like apples freshly plucked from the tree.

I think of them as the heart of winter, pure white and unyielding.

Cut yours into cubes or slices or whatever you fancy.

Top with chopped pistachios, which in my opinion pair phenomenally well with pears. And figs. Basically all the things. 

A drizzle of honey and there you have it, kids. A breakfast worthy of your best intentions.

PEAR PISTACHIO PARFAITS

Ingredients:
1/3 cup plain or Greek yogurt
1/2 pear sliced or chopped
2-3 Tbsp. granola (Fig & Honey Granola)
1-2 Tbsp. chopped pistachios
drizzle of honey

Layer ingredients, beginning with yogurt. Top with pear, then granola, pistachios and a drizzle of honey on top. Eat immediately. Seriously. What are you waiting for?
